Chocolate Peanut Butter Mug Cake

"Oh, sweet lord. 

Oh my god.

Oh.

... it all gets a bit weird when you dig into this mug cake.

Now, listen. I don't like mug cakes - they taste of scrambled egg and desperation. But this is the only recipe I've found that a) works, b) is (pretty) quick, and c) ticks every salty / sweet / oooomph craving a Sunday night might deliver. 

So, wrap your chops around this:


INGREDIENTS

1/4 C all-purpose flour
2 tbs unsweetened cocoa powder
2 tbs caster sugar
1/4 tsp baking powder
1/4 C milk
2 tbs butter, melted
1 tbs peanut butter
1/4 tsp vanilla extract
1 tbs something extra (instant coffee / leftover easter egg / ... booze)

METHOD

In a BOWL (not a mug - yet) whisk flour, cocoa powder, sugar and baking powder until completely combined. Whisk in milk, butter and vanilla until smooth. Fold in the Something Extra. Pour batter into a large microwave-safe mug.

Drop peanut butter into center of mug, gently pressing down until it sinks into the batter.
Microwave on high for 1 minute. Allow to cool for 1 minute before serving.
